アケビの味噌炒め
Stir-fried Akebi(Akebia quinata, chocolate vine) with miso
裏の雑木林で見つけたアケビを使って、おかずになる一品を。
使うのは、甘いワタの部分ではなく、皮の部分。
アケビの味噌炒めは、もともと秋田県の郷土料理ですが、家にあるものでアレンジしてみました。
ほろ苦い風味はゴーヤのよう。食感は茄子。不思議な食材ですが、この時期にしか味わえない一皿になりました。
I found wild grown Akebi in the bush. Akebi is usually eat its fruits and discard outer shell. In this recipe, I use outer shell as main ingredient.
Stir-fried Akebi with miso is originally a local dish of Akita prefecture, but I arranged it with what I have at home.
The bitter flavor is like bitter gourd. The texture is like eggplant. It's a mysterious ingredient, but it's a dish that can only be tasted at this time in the season.
